- In der intakten Pflanze kommt das Cumarin meist nicht in freier Form vor, sondern ist in der Form der Cumarin-Vorstufen "o"-Cumarsäure bzw.
- Im welkenden und trocknenden Zustand setzt der Waldmeister aus der geruchlosen Vorstufe Melilotosid (β-D-Glucosid der "o"-Cumarsäure) das den charakteristischen Waldmeistergeruch verursachende Cumarin frei.
- Nach einer Verwundung oder beim Trocknen entwickelt sich häufig ein Cumarin-Geruch. Das Cumarin entsteht wahrscheinlich aus einem Glucosid der "o"-Cumarsäure.
